New Taco Soup Recipe

I had a taco soup recipe that I had tried several times in the past but no one but Ray and Vincent liked it so I was a little reluctant to try this one tonight but I am soooo glad I did! This soup is great, in fact the four of us wiped out the entire pot! So much for freezing some for later.

I cooked it on the stove top but it can be done in a crockpot and I substituted my own cooked beans instead of canned.



Taco Soup

1 lb. ground beef
1/4 c. chopped onion
1 (16 oz.) can diced tomatoes
1 (16 oz.) can kidney beans – no need to rinse I used home made
1 (16 oz.) can corn – don’t drain
1 (8 oz.) can tomato sauce
1 can Rotel (diced tomatoes with green chilies)
1 pkg. taco seasoning



Brown the ground beef and onion. Mix together with all other ingredients. Simmer at least 1 hour, or all day in the crock pot!

This is exactly what I make! Sometimes I also put a package of Ranch dressing mix, but I'm not really sure if it changes the flavor all that much, with the taco and rotel.

I follow this same recipe but I also add: 1 can of V-8 Juice. I don't know what it is for but it makes it extra yummy!
